Peanut Butter Biscuits

What to do with all my free time?  Since there's only so much news I can read online, and Kdrama has lately been somewhat lackluster, I find myself looking for things to do.  Sure I can clean the house and spruce up the yard but that's really not a lot of fun.  Fortunately, one of my co-workers baked some muffins for the dogs this week and got me thinking, "I can bake some doggie biscuits!"  


So I yanked out my Three Dog Bakery cookbook, and started flipping through the pages looking for easy recipes that didn't require any fancy ingredients (e.g., carob powder, molasses) and ones that ask for ingredients that I have on hand.  

The current state of the fridge is that it is empty aside from 5 dozen eggs and the huge batch of fried rice J had cooked for me before leaving for CA.  

I don't even have milk; and since I wasn't in the mood to go grocery shopping (quite honestly, I'm never in the mood to go grocery shopping) I had to find a recipe that uses water instead.  What I do have tons of are peanut butter and flour.  Given that mom and dad are coming soon, I have to finish all the peanut butter before they get here, otherwise I will hear an earful about how bad peanut butter is to one's health.  What better way to speed up the peanut butter consumption than to make peanut butter cookies!?

Ingredients: 3 cups of whole wheat flour, 1 cup of water, 2 tablespoons of oil, 1/2 cup of peanut butter, and an egg (I added this myself because the dough was too dry).  Mix everything using the handy KitchenAid mixer, roll it out to 1/4 inch (yes I did use a ruler to measure that out thanks my lack of culinary imagination), and lay it out on the baking tray.

Bake it at 350 degrees for 35 minutes, and voila!

J would always protest why I would bake cookies for the dogs but never for him.  I thought, "The dogs will eat it no matter how nasty it is, so I will always feel like a huge success."
